Blanc de Blancs

Known as “BdB” and literally translated, White from Whites.

Winter and holidays seasons make me think of snow… Beautiful to watch and so elegant…

Now if you ask me the first thing that comes to my mind during that season, would be a Blanc de Blancs Champagne.

Why is it called BdB: Those Champagne are made with 100% Chardonnay grapes and as you know, Chardonnay is the only white grape variety out of the 3 majors (Pinot Noir, Meunier, Chardonnay) the other two got a black skin but still makes white juice (I hear you…but that’s another post!)

The Côte de Blancs is home to Amazing Chardonnay vineyards and the soil is chalk-heavy subsoil!

Not only that, but the soil was also at some point ancient seabed, and you can find millions of small, fossilized creatures!

All of that combined and the nice sun in the morning, give you a perfect minerality and saltiness with a pure and elegant flavour of freshness on your palate…
